Honey Pancakes

My nearly 5 year old has not been well lately, bad case of mosquito bites getting infected then resulting in a severe infection of some kind. So to fulfill my job as a good mum...apart from a stressed helpless mum,  I have been making pancakes as a special treat. These are fairly easy to make but you do need a mixer or some good whisking but they only have honey as the sweetener so a good one for little people as a school snack. I like to make them small, kid's palm size and they definitely disappear pretty quickly! print me Honey Pancakes (makes enough for 3-4 people) ingredients 3 eggs 1 cup buttermilk * 2 tbsp vegetable oil a generous tablespoon of honey 200g plain flour 1 1/2 tsp baking powder method separate eggs and place egg yolks, buttermilk, honey and vegetable oil in a bowl and mix until pale and creamy whisk egg whites until soft peaks form, set aside sift flour and baking powder into egg yolk mixture, mix until well combined and no lumps gently fold in ...

Sometimes I get an award here or there and even though I am more than grateful to be considered for one, I find them a little awkward to accept and post about because even though this blog is about me, well I find it a little hard to talk about me or post about awards. B i r t h d a y s  especially kid's birthdays as the joy they show cannot be described, the look in their eyes, the smiles, *  the amazement, the surprise, the fact that they must touch everything  leftover cake (vegan chocolate & vanilla with fondant dinosaurs) and waking up and realising daddy is home and then enjoying some precious scruffing together Hope you've had a grateful kind of day, pop round to Ms Maxabella for some more gratefulness. Espresso Cupcakes with Chocolate Buttercream

It's hot today, very strange kind of summer we are having here.   The oven is on so it makes everything feel hot, I am making vegan gingerbread for my nephews birthday and need to get the cake drawn out so I know what I am doing, it will involve dinosaurs and I am a little bit nervous... For now I have a cupcake recipe to share which my lovely taste tester critiqued and said that she would have loved a bit more coffee in there. My Chef boy says it's enough for him so you decide if you need to add more. Hazelnut and Orange Marmalade tart

It keeps raining, things are getting worse, don't know what to do, I just have to bake to release stress. Hazelnut and Orange Marmalade Tart makes a 23cm tart print me ingredients for tart shell 170g plain flour 75g butter 45g icing sugar 1 egg for filling 180g orange marmalade 8og hazelnut meal 20g plain flour 90g butter, softened 60g caster sugar 30g brown sugar vanilla 1 egg method place flour and butter into a food processor and process until mixture resembles bread crumbs add icing sugar and pulse until it is mixed through lightly whisk egg with a few drops of cold water and add whilst motor is running once mixture comes together take out, flatten and wrap in plastic wrap and place in fridge for about 30 minutes roll out pastry about 2-3mm thick on a lightly floured surface and line tart tin with removable base prick pastry with a fork and refrigerate for another 30 minutes preheat oven to 180C/160C fan blind bake tart shell by placing a sheet of baking...

Fruity Oat Cookies

Holidays are still here and I promised the kids we would bake some cookies, something they can help with and something slightly healthy. Fruity Oat Cookies print me makes about 24 ingredients 125g butter or vegan butter substitute 1 1/2 teaspoons bicarbonate soda 1/4 cup hot water 150g rolled oats 75g brown sugar 160g plain flour 125g currants method stir bicarb soda into hot water and set aside. place butter into a small saucepan over low heat and melt. mix bicarb mixture into butter combine oats, sugar, flour and currants in a bowl, add butter mixture and allow to stand for 5 minutes preheat oven to 160C line 2 trays with baking paper roll about a tablespoon and a half into balls and place on trays a few centimetres apart, flatten slightly bake for 15 minutes or until golden, allow to cool place on wire rack to cool completely I think they liked their cookies, I got a special drawing as a thank you. I   don't know how the new year snuck up so quickly, it seems very weird to be writing 2011 on things. It's been a while since I have been online, it's been a while since I baked, it's been a while since I took a photo and it's definitely been a while since I spoke to you. I had soo many things planned in my head, so many recipes to share, so many photos to take and then my camera went back for repairs,  I think she had a hard year and then I needed to go in for repairs. I got sick, I couldn't get out of bed, I couldn't stand up without feeling faint, all my energy was lost, all the colour was gone, maybe I had a hard year as well. We had another birthday pass and a few less tears. I promised you some cupcake papers so I let random.org choose a number so Sarah , please send me an email with your details and I'll post them off to you.
