Mmm mudcake!

Had a
l o n g and busy night trying to get an order baked to be delivered this morning.
Once the kids were asleep, I was working till really late to get it all done, but had one more thing left to do this morning, ice the mudcake.

The mudcake turned out really well so I thought I'd share the recipe for anyone who has been craving a bit of chocolate...well, a lot of chocolate...now that the cold weather calls for some comfort food.


Chocolate Mud Cake

Ingredients


  • 350g dark chocolate
  • 225g butter
  • 600 ml water
  • 3 eggs
  • 400g caster sugar
  • 400g self raising flour

Grease and line a 23cm round cake tin.
Preheat oven to 170C.
  1. In a saucepan over low heat, heat chocolate, butter and water. Stir frequently until melted and smooth. Remove from the heat and cool slightly.
  2. In a large bowl, lightly beat eggs. Gradually beat cooled chocolate mixture into eggs.
  3. Whisk sugar and flour into chocolate mixture, continue beating until smooth and well blended.
  4. Pour mixture into cake tin. Bake for 45 minutes or until skewer inserted into centre of cake comes out clean.
  5. Turn cake onto wire rack to cool.

The mixture is quite runny and you'll probably think somethings not right, that is how it is supposed to look. Make sure to use a solid cake tin not a spring form tin.

Line tin with baking paper, this will make the cake easier to remove from the tin.

Chocolate Glaze
  • 225g dark chocolate
  • 165 ml double or whipping cream
  1. In a saucepan over low heat, heat chocolate and cream, stirring frequently until melted and smooth. Keep warm.
Place cake on wire cake rack and pour warm glaze over the top.
Spread glaze with a palette knife to cover top and sides.

This cake is best eaten at room temperature or heated in the microwave for a little.

  1. Oh wow, that looks so yummy! I reminds me a little of a Texas Sheet cake I baked once, which was really fudgy (I'm not from Texas, mind you, so I probably didn't make it exactly right).

    We're heading into summer here, but it's still a bit chilly in Pennsylvania, so maybe I'll just have to start up the oven!
