Moroccan Mint Tea
A lovely friend brought some wonderful mint from her garden to us today so I thought what a better way to enjoy it in, than a beautiful mint tea which brings back to me the smells & tastes of Morocco.very easily made, does have sugar in it but you can substitute I guess.
Mint tea (from the food of morocco)
ingredients
- 1 bunch fresh mint
- 2 teaspoons chinese gunpowder green tea
- 2 tablespoons white sugar, or to taste
- wash and pat dry mint leaves with a tea towel
- rinse a teapot with boiling water, add tea and a little boiling water, swirl briefly and allow to settle. pour out the tea water to remove any tea dust, then half fill teapot again with boiling water

- take the mint leaves and add to pot, add sugar and then fill with boiling water.

- allow tea to brew for a few minutes
- pour out a glass of tea and pour back into teapot. repeat a couple more times to dissolve sugar

this tea is served in tea glasses to make it super special and also poured from a height to aerate it. add a mint sprig to each glass and sit down and enjoy it...mmmmm
