things that make me smile

There are times when the days are too short, kids have been at their worst, homely duties are awaiting to be done and that headache that will not go away... and the last thing you want to do is do a blog post or sit at the computer because is there even anyone out there that wants to read this stuff anyway.

 And then you read this and it makes you feel like somebody does care, and someone is reading, and that this is worthwhile, and it makes me cry and smile at the same time.

Go have a read of this and I promise that you will be laughing and picturing this all happen as you read every word.

It's people like you Leonie that make me smile and love what I do even more, all because I know that the recipes, the photos, the never ending supply of cupcakes have all been made for a great cause.

    Oh....I love roses!! They are beautiful!!! I am so glad you enjoyed my post..the cakes were sensational!!! I think it made a few people smile...it made me realize that having 4 thumbs and 6 fingers when cooking is quite normal really!!xx

Honey Jumbles

I just realised that I have been using honey and spices in alot of things lately, I guess it's because it's winter and the smells and tastes make you feel warm and sweet. Have been thinking about making Honey Jumbles for a while and saw them over at Liss's the other day and definitely had to try them as they look and believe me they smell soooo good!  My critics advise me they are delicious and very moreish. Honey Jumbles ingredients 90g butter 3/4 cup honey 2 cups plain flour 1 teaspoon bicarbonate of soda 1 1/2 teaspoons ground ginger 1 1/2 teaspoons mixed spice 1 teaspoon ground cinnamon 2 tablespoons milk   icing 1 egg white 1 1/2 cups icing sugar, sifted vanilla extract  strawberry paste Method Place butter and honey in a saucepan and slowly bring to the boil over a low heat. Simmer for a few minutes, then allow to cool for about 15 minutes Sift flour, bicarbonate of soda and spices and add to butter mixture, gently stir in milk.  A...

As the weather warms up the kids tend to ask for something cold and yummy to enjoy after school. Reading the ingredients labels on ice cream I feel at a loss trying to figure out what all those numbers mean, I mean really, it’s just ice cream, how many ingredients need to be in there after all. I love to try and make everything from scratch so why not ice cream, well I had a go and using an ice cream maker made it really quick and easy. Here’s a basic recipe I made using a Cusinart ice cream maker Berrylicious ice cream Makes 1 litre Ingredients     ¾ cup whole milk   ½ cup sugar or honey if you prefer 1½ cups cream 150grams mixed berries, thawed and slightly mashed with a fork Method U sing a mixer or hand whisk, mix milk and sugar in a bowl for a few minutes until sugar has dissolved   Add cream and mix until combined Turn the machine on and pour the mixture into freezer bowl, and let it mix until thickened, about 25 minut...
