Marmalade Tart

I have neglected you lately so I baked you a tart, hope you'll join me for a cuppa and a piece..or two.

Marmalade Tart
serves 6-8

  • 50 g butter
  • 50 g caster sugar
  • 1 tsp vanilla
  • 150 g flaked almonds
  • 2 tbs milk
  • about 1 or 1 1/4 cup marmalade
method
  • make pastry dough as per recipe, blind bake
  • preheat oven to 180 C (conversions here)
  • place butter, sugar, vanilla, almonds and milk in a saucepan over low heat, stirring until butter has melted, allow to cool
  • spread marmalade in prepared tart shell, pour over topping

  • serve warm with some vanilla ice cream
I used mandarin marmalade, you can use whatever flavour you like, easy peasy!

It looks perfectly tartalicious. Almond topping...mmm..yuuum. You know, it was funny, as I was having my white ganache battle I lamented that I didn't have your phone number, I was thinking, I just bet Cathie would know what to do, although I am sure you wouldn't have appreciated the call at midnight ;) x
