Apple & Spice Cupcakes
It feels like I haven't made cupcakes in a while so I thought I'd bake these for you to help you recover from your chocolate egg hangover.They are very quick and easy and they have apple in them...surely that must be a good thing.
Apple & Spice Cupcakes
(makes 12 large cupcakes)

ingredients
- 1 medium apple
- juice of 1 lemon
- 1 tablespoon maple syrup
- 100g butter, softened
- 100g caster sugar
- 2 eggs
- 175g self-raising flour
- 1 teaspoon cinnamon
- 1/2 teaspoon mixed spice
- preheat oven at 180C or 160C using fan oven* and line cupcake tin with papers
- peel and core apple and dice finely, place in bowl, pour lemon juice over apple and add maple syrup, set aside
- with an electric mixer beat butter and sugar until pale, add eggs one at a time and mix well
- sift in flour and spices and continue mixing just until combined
- add apple mixture and fold through
- spoon into cupcake papers, about 3/4 full and bake for about 25 minutes until lightly golden and tested with a skewer

They can be left un-iced and still be enjoyed, or you can ice with a vanilla butter cream or a cream cheese frosting
Vanilla Buttercream
ingredients
- 100g butter, softened
- 2 cups icing mixture
- 1 tablespoon milk
- 1 teaspoon vanilla
- 1 teaspoon lemon juice
- using an electric mixer beat butter until smooth, add 1 cup of sugar, milk and vanilla and continue mixing
- add remaining sugar and lemon juice and beat for a further 5 minutes until fluffy
- if it's not thick enough add some more sugar, if it's too thick add a touch of milk

* when using a fan forced oven, temperature needs to be lowered by 20 degrees
