Happy day to YOU

It's our first Easter without a special loved one so it may be a little sad, but it definitely makes us appreciate those that are still around even more.

I hope you give your family an extra big squishy hug and enjoy them for who they are.

Hugs to you all, especially those that are missing a few special people in their lives.

    Hugs to you this easter - the firsts of everything after a loss are always heard ( I lost my Pop an a very special uncle last year - about 15 days appart) We have jut past the first year of everything with out them. You still miss them but the 'first' title gets dropped and I have found it alot easier this time around.

    Hope that you and your family remember the happy times that you had together and continue to makemore of them. Hugs and Happy Easter.

Honey Jumbles

I just realised that I have been using honey and spices in alot of things lately, I guess it's because it's winter and the smells and tastes make you feel warm and sweet. Have been thinking about making Honey Jumbles for a while and saw them over at Liss's the other day and definitely had to try them as they look and believe me they smell soooo good!  My critics advise me they are delicious and very moreish. Honey Jumbles ingredients 90g butter 3/4 cup honey 2 cups plain flour 1 teaspoon bicarbonate of soda 1 1/2 teaspoons ground ginger 1 1/2 teaspoons mixed spice 1 teaspoon ground cinnamon 2 tablespoons milk   icing 1 egg white 1 1/2 cups icing sugar, sifted vanilla extract  strawberry paste Method Place butter and honey in a saucepan and slowly bring to the boil over a low heat. Simmer for a few minutes, then allow to cool for about 15 minutes Sift flour, bicarbonate of soda and spices and add to butter mixture, gently stir in milk.  A...

As the weather warms up the kids tend to ask for something cold and yummy to enjoy after school. Reading the ingredients labels on ice cream I feel at a loss trying to figure out what all those numbers mean, I mean really, it’s just ice cream, how many ingredients need to be in there after all. I love to try and make everything from scratch so why not ice cream, well I had a go and using an ice cream maker made it really quick and easy. Here’s a basic recipe I made using a Cusinart ice cream maker Berrylicious ice cream Makes 1 litre Ingredients     ¾ cup whole milk   ½ cup sugar or honey if you prefer 1½ cups cream 150grams mixed berries, thawed and slightly mashed with a fork Method U sing a mixer or hand whisk, mix milk and sugar in a bowl for a few minutes until sugar has dissolved   Add cream and mix until combined Turn the machine on and pour the mixture into freezer bowl, and let it mix until thickened, about 25 minut...
