Viennese Fingers


The cookie baking bug has really got me and these have been on my mental to try list for a while.

My mum used to make them for us when we were younger and she'd sandwich them together with jam and dip the tops in chocolate.

This is the first attempt at them and I couldn't believe how easy they were to make.

Viennese fingers
makes about 20


ingredients
  • 200g butter, softened
  • 80g icing sugar
  • 4 egg yolks
  • 3 teaspoons vanilla
  • 250g plain flour
  • 200g chocolate 
method
  • preheat oven to 180C/160C fan, line two baking trays with paper
  • beat butter and icing sugar together until light and fluffy, about 5 minutes
  • add yolks one at a time and beat until well combined, add vanilla and continue mixing
  • sift in flour and continue beating just until combined
  • spoon mixture into a piping bag with a large start tip nozzle and pipe about 6cm lengths onto trays
  • bake for about 10-12 minutes until lightly golden
  • allow to cool then transfer to wire racks
  • place chocolate into a metal bowl over a saucepan of boiling water and stir until chocolate has melted
  • dip tops of biscuits into chocolate and sprinkle with nuts or sprinkles

  3. Ooh yes they do look so delish Cathie! Thanks for the recipe. I'd love to try them. Wonder if they'd work with rice flour instead of the wheat? I'm trying cut out wheat quite a bit lately and have been making a few nice things by substituting the wheat flour.
    So wish I lived close enough to do your class!

  6. I was all excited about doing this until I got to those 2 fateful words - piping bag. I've tried & tried but cannot master this instrument of the Devil. My last attempt ended in tears & I chucked the thing into the garbage bin in a fit of pique, mixture & all!

  12. Viennese fingers! My favourite! These look uber delicious Cathie. I always buy one from the local bakery in the High Street near my Dad's house. They have been making them since I can remember and they are still just as good and melt in my mouth. This post has brought back memories for me. I never buy in Australia as they always have jam (?). Now I will make my own - Thanks Cathie!

    Oh my Cathie, these look wonderful! I too have the cookie baking bug...in a BIG way. I just can't get enough time in the kitchen. These little puppies look as if they would melt in ones mouth...Mmmmmm
