    Hey Cath, I've been slowly getting back into the swing of blogland and have just caught up on some of your posts. I'm sorry to hear you are not feeling yourself. I think we can all relate to this. Sometimes I find it helps just to sit with it for a while and think about why I'm feeling that way. A wise colleague of mine has a saying: "if you're feeling crappy, sad or confused...welcome to the human race". It helps put it into perspective when I think I may be the only one feeling that way. Sending you my virtual hugs. By the way, those stamps are fantastic and you've inspired me to give it a shot. Your photos are always exquisite. I now have a new and very much improved camera yet I have no idea how to take shots like yours. You have a gift my friend....on so many levels. Have a great weekend.

Honey Jumbles

I just realised that I have been using honey and spices in alot of things lately, I guess it's because it's winter and the smells and tastes make you feel warm and sweet. Have been thinking about making Honey Jumbles for a while and saw them over at Liss's the other day and definitely had to try them as they look and believe me they smell soooo good!  My critics advise me they are delicious and very moreish. Honey Jumbles ingredients 90g butter 3/4 cup honey 2 cups plain flour 1 teaspoon bicarbonate of soda 1 1/2 teaspoons ground ginger 1 1/2 teaspoons mixed spice 1 teaspoon ground cinnamon 2 tablespoons milk   icing 1 egg white 1 1/2 cups icing sugar, sifted vanilla extract  strawberry paste Method Place butter and honey in a saucepan and slowly bring to the boil over a low heat. Simmer for a few minutes, then allow to cool for about 15 minutes Sift flour, bicarbonate of soda and spices and add to butter mixture, gently stir in milk.  A...

As the weather warms up the kids tend to ask for something cold and yummy to enjoy after school. Reading the ingredients labels on ice cream I feel at a loss trying to figure out what all those numbers mean, I mean really, it’s just ice cream, how many ingredients need to be in there after all. I love to try and make everything from scratch so why not ice cream, well I had a go and using an ice cream maker made it really quick and easy. Here’s a basic recipe I made using a Cusinart ice cream maker Berrylicious ice cream Makes 1 litre Ingredients     ¾ cup whole milk   ½ cup sugar or honey if you prefer 1½ cups cream 150grams mixed berries, thawed and slightly mashed with a fork Method U sing a mixer or hand whisk, mix milk and sugar in a bowl for a few minutes until sugar has dissolved   Add cream and mix until combined Turn the machine on and pour the mixture into freezer bowl, and let it mix until thickened, about 25 minut...
