February thoughts

February was a little difficult round here.
School started, we turned six
Kinder started, we started speech therapy
Emotions have been high, from little people and big people (that would be me)
Reading has been a little difficult to get back into
Seeing his "speech doctor" has been great, getting used to him making "sh" sounds and "K" sounds has been a little strange.
Strange because my little person may not be little any more
He has been sneaking into our bed less frequently
I am missing the cuddles
I have a few more hours to myself, but it's still so new

Honey Jumbles

I just realised that I have been using honey and spices in alot of things lately, I guess it's because it's winter and the smells and tastes make you feel warm and sweet. Have been thinking about making Honey Jumbles for a while and saw them over at Liss's the other day and definitely had to try them as they look and believe me they smell soooo good!  My critics advise me they are delicious and very moreish. Honey Jumbles ingredients 90g butter 3/4 cup honey 2 cups plain flour 1 teaspoon bicarbonate of soda 1 1/2 teaspoons ground ginger 1 1/2 teaspoons mixed spice 1 teaspoon ground cinnamon 2 tablespoons milk   icing 1 egg white 1 1/2 cups icing sugar, sifted vanilla extract  strawberry paste Method Place butter and honey in a saucepan and slowly bring to the boil over a low heat. Berrylicious ice cream recipe and a giveaway for you

As the weather warms up the kids tend to ask for something cold and yummy to enjoy after school. Reading the ingredients labels on ice cream I feel at a loss trying to figure out what all those numbers mean, I mean really, it’s just ice cream, how many ingredients need to be in there after all. I love to try and make everything from scratch so why not ice cream, well I had a go and using an ice cream maker made it really quick and easy. Here’s a basic recipe I made using a Cusinart ice cream maker Berrylicious ice cream Makes 1 litre Ingredients     ¾ cup whole milk   ½ cup sugar or honey if you prefer 1½ cups cream 150grams mixed berries, thawed and slightly mashed with a fork Method U sing a mixer or hand whisk, mix milk and sugar in a bowl for a few minutes until sugar has dissolved   Add cream and mix until combined Turn the machine on and pour the mixture into freezer bowl, and let it mix until thickened, about 25 minut...
