Honey Jumbles

I just realised that I have been using honey and spices in alot of things lately, I guess it's because it's winter and the smells and tastes make you feel warm and sweet.

Have been thinking about making Honey Jumbles for a while and saw them over at Liss's the other day and definitely had to try them as they look and believe me they smell soooo good! 

My critics advise me they are delicious and very moreish.

Honey Jumbles

ingredients

  • 90g butter
  • 3/4 cup honey
  • 2 cups plain flour
  • 1 teaspoon bicarbonate of soda
  • 1 1/2 teaspoons ground ginger
  • 1 1/2 teaspoons mixed spice
  • 1 teaspoon ground cinnamon
  • 2 tablespoons milk
  •  

icing

  • 1 egg white
  • 1 1/2 cups icing sugar, sifted
  • vanilla extract 
  • strawberry paste

Method

  • Place butter and honey in a saucepan and slowly bring to the boil over a low heat. Simmer for a few minutes, then allow to cool for about 15 minutes
  • Sift flour, bicarbonate of soda and spices and add to butter mixture, gently stir in milk. 
  • Allow to cool at room temperature for about an hour
  • Preheat oven to 180°C. Line baking trays with baking paper.
  • Turn dough onto a lightly floured surface and knead, adding a little flour if needed
  • Divide mixture into four portions and roll each into a long sausage shape and cut each sausage into six pieces
  • Tuck cut edges under slightly 

  • Place biscuits onto trays. Bake for about 8 to 12 minutes or until biscuits begin to crack on surface.
  
  • For Icing : Whisk egg white in a bowl. Add icing sugar, stirring until smooth, add strawberry paste or red food colour to half the icing. Add vanilla extract to other half
  • Spread pink icing over half the biscuits and white over the other half. Allow to set

  8. Hmmm, you make winter feel so good! Maybe i could make them today - it's supposed to be summer in germany, but it's cold and rainy. Sugar and spice is what we need ;)

  11. Oh, you have just given me the most lovely childhood flashback - we used to make these all them time when I was growing up. I remember eating so many at a time, they taste so good, I can't stop at one.

  45. Made'em Cathie and they were a big fave, mine were gluten free and cooked in the wood stove and rolled and cut in circles, no icing. Have served wonderfully as school morning tea all week. gingerbready type texture xx Thanks, Tan

  47. HONEY JUMBLES ... now that's a stroll down memory lane and right now I'm glad I'm gluten free. Mmmm BUT then again I wonder how these would go being baked with Spelt or Gltuen Free flour! OK I'll set the challenge but am not having a go as I'd surely gormandise the whole lot!

  49. These look delish & I love the photo of them in the jar with sprinkles! I've never heard of honey jumbles being in the US but it would be fun to try this recipe! They really remind me of my nana's biscotti recipe (she frosted them the same way with sprinkles). Have a great day!!

    I can figure out the weights/measures, but what, exactly, is "mixed spice"? Allspice?

    I can't answer back to you directly as your email address doesn't show up.
    difference is "Allspice is the dried, unripe berry of a pimento tree. It is available ground or in seed form, and used in dishes such as pickles, casseroles, cakes and puddings.

    Mixed spice is a classic mixture generally containing caraway, allspice, coriander, cumin, nutmeg and ginger, although cinnamon and other spices can be added. It is used with fruit and in cakes."

    Any tips to make them evenly shaped and sized? Mine always turn out higgledy-piggedly.
