Honey Jumbles
I just realised that I have been using honey and spices in alot of things lately, I guess it's because it's winter and the smells and tastes make you feel warm and sweet.
Have been thinking about making Honey Jumbles for a while and saw them over at Liss's the other day and definitely had to try them as they look and believe me they smell soooo good!
My critics advise me they are delicious and very moreish.
Honey Jumbles
ingredients
- 90g butter
- 3/4 cup honey
- 2 cups plain flour
- 1 teaspoon bicarbonate of soda
- 1 1/2 teaspoons ground ginger
- 1 1/2 teaspoons mixed spice
- 1 teaspoon ground cinnamon
- 2 tablespoons milk
icing
- 1 egg white
- 1 1/2 cups icing sugar, sifted
- vanilla extract
- strawberry paste
Method
- Place butter and honey in a saucepan and slowly bring to the boil over a low heat. Simmer for a few minutes, then allow to cool for about 15 minutes
- Sift flour, bicarbonate of soda and spices and add to butter mixture, gently stir in milk.
- Allow to cool at room temperature for about an hour
- Preheat oven to 180°C. Line baking trays with baking paper.
- Turn dough onto a lightly floured surface and knead, adding a little flour if needed
- Divide mixture into four portions and roll each into a long sausage shape and cut each sausage into six pieces
- Tuck cut edges under slightly
- Place biscuits onto trays. Bake for about 8 to 12 minutes or until biscuits begin to crack on surface.
- For Icing : Whisk egg white in a bowl. Add icing sugar, stirring until smooth, add strawberry paste or red food colour to half the icing. Add vanilla extract to other half
- Spread pink icing over half the biscuits and white over the other half. Allow to set
Hope you get a chance to try them, thanks to those that have tried other recipes and let me know the results, really appreciate it.

HONEY JUMBLES ... now that's a stroll down memory lane and right now I'm glad I'm gluten free. Mmmm BUT then again I wonder how these would go being baked with Spelt or Gltuen Free flour! OK I'll set the challenge but am not having a go as I'd surely gormandise the whole lot!
ReplyDeleteOoops just saw Tanya has done it ... Delish post as always Cathie ;)
wow, they look great! love the name too :-)
ReplyDeleteThese look delish & I love the photo of them in the jar with sprinkles! I've never heard of honey jumbles being in the US but it would be fun to try this recipe! They really remind me of my nana's biscotti recipe (she frosted them the same way with sprinkles). Have a great day!!
ReplyDeleteI don't know how I stumbled upon your site, but I've been reading it for a while now, all the way from Nutley, New Jersey, USA! What beautiful pictures and recipes!
ReplyDeleteI can figure out the weights/measures, but what, exactly, is "mixed spice"? Allspice?
What a beautiful experience it is to come to your site.
hi Whitney,
ReplyDeleteI can't answer back to you directly as your email address doesn't show up.
difference is "Allspice is the dried, unripe berry of a pimento tree. It is available ground or in seed form, and used in dishes such as pickles, casseroles, cakes and puddings.
Mixed spice is a classic mixture generally containing caraway, allspice, coriander, cumin, nutmeg and ginger, although cinnamon and other spices can be added. It is used with fruit and in cakes."
hope that helps
I can't stop making these (3rd time in 3 weeks!) and they are such a hit with family and friends.
ReplyDeleteAny tips to make them evenly shaped and sized? Mine always turn out higgledy-piggedly.
thanks,
-h
PS I hope your X-mas cookie course went well, I wanted to come but had visitors in town.
glad to hear Helen!
ReplyDeleteI normally just divide the mixture into the sausage pieces and then slightly form it in my palm.
let me know if you need anything else and let me know your email address so I can reply back to you directly.
♥
OK, I will have to try these! Thanks!
ReplyDeleteI just made these for my Church meeting, and they are Ammaazzing!
ReplyDeletei ate way too much mixture.
Thanks for posting these wonderful creations :)
