Honey & Spice Cookies

Honey and Spice Cookies
(makes about 24) conversions
ingredients
- 125g butter
- 1/2 cup (85g) brown sugar
- 1/2 cup (170g) honey
- 1 teaspoon mixed spice
- 1 teaspoon cinnamon
- 1/2 teaspoon bicarb soda
- 1 teaspoon boiling water
- 1 3/4 cups plain flour
Honey Icing
ingredients
- 1 cup icing sugar
- 2 tablespoons honey
- 1/2 teaspoon mixed spice
method
- Preheat oven to 180C, place butter, sugar, honey and spices into a small saucepan over a low heat cook until melted, stirring occasionally
- dissolve bicarb soda with hot water and add to butter mixture, stir to combine
- add to flour and mix until combined, if mixture feels too runny and needs a little more flour, add a tablespoon or so and continue mixing
- place a spoonful of mixture onto lined tray and flatten slightly, allowing room to spread
- bake for about 10-12 minutes until slightly golden around the edges
- make icing by mixing icing sugar, honey and mixed spice together until smooth, add a touch of hot water if mixture is too thick
- ice slightly cooled cookies and watch them disappear!
