Honey and Spice Cookies
(makes about 24) conversions
ingredients
  • 125g butter
  • 1/2 cup (85g) brown sugar
  • 1/2 cup (170g) honey
  • 1 teaspoon mixed spice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon bicarb soda

  • 1 3/4 cups plain flour
Honey Icing

ingredients
  • 1 cup icing sugar
  • 2 tablespoons honey
  • 1/2 teaspoon mixed spice

method
  • Preheat oven to 180C, place butter, sugar, honey and spices into a small saucepan over a low heat cook until melted, stirring occasionally
  • dissolve bicarb soda with hot water and add to butter mixture, stir to combine
  • add to flour and mix until combined, if mixture feels too runny and needs a little more flour, add a tablespoon or so and continue mixing
  • place a spoonful of mixture onto lined tray and flatten slightly, allowing room to spread

  • bake for about 10-12 minutes until slightly golden around the edges
  • make icing by mixing icing sugar, honey and mixed spice together until smooth, add a touch of hot water if mixture is too thick
  • ice slightly cooled cookies and watch them disappear!
