Thank you all for the extra sweet birthday wishes for the little guy.

So this is what has been on my mind for the last month or so, creating a special creative and fun filled day for a little boy who is just growing up way too fast for my liking.

Easy one bowl Orange Cake

  This is a really easy one when you know you should bake something but really can't be bothered. Pop all the ingredients in a bowl and mix away. Orange Cake makes one 20cm round cake, serves about 10 print me  ingredients 150g butter, room temperature 150g sugar zest of an orange 3 eggs 225g self raising flour 30ml milk, room temperature 30ml freshly squeezed orange juice   method preheat oven to 180C/160C fan grease and line a 20 cm round cake tin or a loaf tin put all ingredients in a large bowl and beat with an electric mixer for a few minutes until mixture is smooth pour into cake tin and bake for about 35min, test with cake skewer allow to cool in tin, ice when cool to make icing  30g butter, softened, a couple of tablespoons of freshly squeezed orange juice, about 200g icing sugar, maybe more beat with an electric mixture a few minutes until light and fluffy, add more icing sugar if too runny, or if you like runny leave it as is,  spread over cake an...

Sponge Cake for dessert anyone?

  We have had an abundance of eggs lately as our girls have been performing fantastically so I asked what the family wanted for dessert and it was a unanimous.."Sponge Cake please!" So here is a fairly simple sponge cake recipe which is very light and moist and the best thing is, it only has four ingredients. Sponge Cake Ingredients 1 1/4 cup plain flour 6 eggs, at room temperature 3/4 cup caster sugar 60 g melted butter Method Grease 2 x deep, 20cm round cake tins and line bases with baking paper. Sift flour three times to aerate it Preheat oven to 180C. Using an electric mixer, beat eggs and sugar in a large bowl on medium-high speed for 6 minutes, or until mixture is thick, pale and tripled in volume. Gradually sift flour over egg mixture, add melted butter, while simultaneously folding in with a large metal spoon until just combined. Divide mixture between prepared tins. Berrylicious ice cream recipe and a giveaway for you

  As the weather warms up the kids tend to ask for something cold and yummy to enjoy after school. Reading the ingredients labels on ice cream I feel at a loss trying to figure out what all those numbers mean, I mean really, it’s just ice cream, how many ingredients need to be in there after all. I love to try and make everything from scratch so why not ice cream, well I had a go and using an ice cream maker made it really quick and easy. Here’s a basic recipe I made using a Cusinart ice cream maker Berrylicious ice cream Makes 1 litre Ingredients     ¾  cup whole milk   ½  cup sugar or honey if you prefer  1½  cups cream 150grams mixed berries, thawed and slightly mashed with a fork Method U sing a mixer or hand whisk, mix milk and sugar in a bowl for a few minutes until sugar has dissolved   Add cream and mix until combined Turn the machine on and pour the mixture into freezer bowl, and let it mix until thickened, about 25 minutes.  ...
